The rule of thumb is that acid cleaners dissolve alkaline soils and alkaline cleaners dissolve acid soils and meals wastes. Improper use of detergents can truly “set” soils, making them more difficult to take away (e.g., acid cleaners can precipitate protein). Many movies and biofilms require more refined cleaners which are amended with oxidizing agents for removing. Food soil is usually outlined as unwanted matter on food-contact surfaces. The primary supply of soil is from the food product being handled.
